ever get on a kick? like a different one everyday?
so, i am on a kick trying to eat less meat and less dairy. the important thing is that i am in pursuit of the perfect veggie burger. i have many, many recipes for them, and will be systematically trying them out. i will also be experimenting with inventing my own (and using my carnivore matt as a taster). last night i created and will continue to perfect (drum roll please)…
vegetarian thanksgiving patties
any kind of white beans (i used pinto 15 oz can)
salt and pepper
extra virgin olive oil
in a food processor, grind the beans. shred one zucchini and one large carrot. mix together with two eggs, breadcrumbs to taste, salt, pepper, cranberries. shape patties and refrigerate for at least 30 minutes. when complete, preheat pan, add olive oil, and pan fry patties.
serve with a glob of applesauce on the side.
